Ingredients

4 Tablespoons Extra Virgin Olive Oil

Zest from 1 lime, plus 2 teaspoons lime juice

1 Tablespoon Big D’s Q Game On Seasoning

A pinch of salt and pepper

2 Tablespoons chopped, roasted cashews

1 pound mini-sweet peppers

Equipment Needed

  1. Grill

  2. Tongs

  3. Whisk

This recipe is a great side dish to accompany anything you are grilling.


Instructions

  1. Start with making a quick lime vinaigrette dressing by mixing

    ·      4 TBSPs olive oil,

    ·      Zest from one lime, 2 tsp lime juice (about the juice from one half of lime),

    ·      1 Tbsp Big D’s Q GAME ON seasoning,

    ·      A pinch of salt and pepper,

    ·      and 2 TBSP roasted chopped cashews. (I roast the cashews on the grill before cooking the bell peppers.)

    ·      Whisk all ingredients together and sit aside.

  2. Lightly coat 1 pound of mini-sweet peppers with olive oil. Cook over medium heat on the grill. Once peppers begin to char, flip to the other side and cook until charred. The peppers will begin to blister and may pop open slightly.

  3. Remove from heat.

  4. In a serving tray, drizzle the lime vinaigrette over the top of the charred peppers. The peppers will be ready to eat immediately. As they begin to cool, the lime vinaigrette flavor begins to pop.
