One-Pan Bacon Potato Hash

Story

I had a friend who lived alone. He kept potatoes, eggs, cheese, and onions in his kitchen. He threw this simple meal together anytime he wanted a quick meal. Saved A LOT of money and fed a lot of friends with this dish. We took inspiration and added a few of Big D’s flavors.

This is easy to make. It is perfect for any meal. We like to make this for Mother’s Day Brunch.

If you follow this technique, you will be able to make it in one pan. You can increase the size of your pan and increase ingredients to feed a crew. Cook it low and slow!


Ingredients

  • 5 Tbs. Oil (I prefer olive oil if I am adding bacon. If I don’t have any meat that day, I use bacon grease for added flavor).

  • 1/2 -1 onion

  • 4 slices bacon (other meats can be substituted, such as steak, ham, sausage)

  • 1 green bell pepper

  • 1 red bell pepper

  • 2 medium-sized red potatoes

  • 2 -3 eggs (this is your choice. Depends on how many you want to feed)

  • 1-2 oz cheese (use what you have. I used medium cheddar today.)

Equipment Needed

  1. One medium-sized skillet, with top if possible

  2. Spatula for stirring

  3. Sharp knife

  4. Cutting board


Pour 5 Tbsp. of oil into the pan and turn on medium heat. Once the oil starts to sizzle, pour in onions. Turn the heat to low and give it a good stir!

Slice the bacon into small cubes. Put in pan and stir. Keep the heat on low to let this cook slowly as you are prepping other ingredients.

Cut up bell peppers (avoiding the seeds, core, and the with pith that lines the inside)  and coarsely chop.

Place the chopped red and green bell peppers into the pan and stir. Keep that heat on low, we need this to cook slowly as we peel and cut up the potatoes.

Crumble or cut up the cheese and drop it into the bowl AFTER you’ve whisked the eggs. Whisk again to mix the cheese into the eggs. This will help form cheesy eggs when you add them to the pan.

Pour in pan.

Sprinkle Big D’s Q Game On seasoning to had some herbs, turmeric (great for your health), and other great seasonings. Give it a stir and you are ready to plate.

Instructions

  1. Add 5 Tbsp. olive oil to skillet. Heat with medium heat. Once hot, lower to low.

  2. Coarsely chop 1/2 - 1 onion. (Make a choice depending on how much you like onion). Add to pan and stir.

  3. Slice 4 pieces of bacon into cubes. Add to pan. Stir to make sure bacon is in contact with the bottom of the pan.

  4. Remove the core and seeds from red and green bell pepper. Coarsely chop. Add to pan. Stir.

  5. Peel 2 medium-size potatoes. Cut into 1/4 slices. Add to pan. Stir so potatoes are touching the bottom of the pan. Cover.

  6. Crack 2 eggs in a small bowl. Tilt bowl to 45-degree angle and whish with a side to side motion.

  7. Crumble (or cut) cheese and add to the whisked eggs. Whisk again to mix the cheese into eggs.

  8. Pour eggs over ingredients in the pan and quickly stir. This will help give even distribution and prevent overcooking.

  9. Sprinkle with Big D’s Q GAME ON and STEAK OUT. Stir.

  10. Plate and eat!

 

Tips and Tricks

This recipe feeds 2-4 people. Increase ingredients and skillet size to feed more. If you are feeding a crew, you can cook ingredients in multiple pans and mix together at the end for speed.

If you don’t have any of the ingredients, this dish substitutes well for other things commonly found in your kitchen.
