Smoked Spatchcock Chicken

BBQ doesn’t get any easier or more delicious than this smoked, spatchcocked chicken complete with a pineapple pepperjelly/bbq sauce glaze.

This Chicken Will Make You Swallow Your Tongue!

Packed with herbs, smoked flavor, and an ever so slight kick! This juicy chicken will put a smile on your face.


Ingredients

  • 1 whole chicken

  • Big D’s Q GAME ON, STEAK OUT, BBQ SAUCE

  • Lottie’s Pineapple Pepper Jelly

Equipment Needed

  1. Smoker (we are cooking on a Lang Sticker Burner, but you can use any or take this into the kitchen and cook in the oven)

  2. Sharp knife and kitchen shears.

  3. Brush.

Instructions

  1. Find the back bone of the chicken and score a cut on either side of the back-bone. Use kitchen shears to cut out the back bone and remove.

  2. On the bottom/bone-side of the bird, layer with Big D’s Q GAME ON seasoning.

  3. On the side side, layer evenly with Big D’s Q STEAK OUT. Allow seasoning to sweat into the meat for at least 10 minutes.

  4. With smoker at 250 - 275 degrees, allow to cook until a meat thermometer reaches 180 degrees in the joints.

  5. Mix about 1/2 cup Big D’s Q Original BBQ sauce with 1/2 cup Lotties Pepper Jelly. Brush over the top of chicken and put back over heat for 5-8 minutes (just long enough for the glaze to set).

  6. Remove chicken and serve that juicy yardbird!

 

Tips and Tricks

If you don’t have pepper jelly, you can use straight BBQ Sauce for the glaze!
