Ingredients
14 - 16 lb brisket

Equipment Needed
Sharp knife
Butcher Paper
Smoker
Instructions
Trim the excess fat and silver skin form the brisket. (Silver skin is a silver membrane)
Season with a layer of Big D’s Q Grill Appeal, followed by a second layer of Big D’s Q STEAK OUT.
Smoke at 250 degrees for about 6 hours. Then wrap with butcher paper.
Smoke a couple more hours until 206 -208 (probe tender).
Rest for 3 hours before serving.
Tips and Tricks
Brisket will be tender enough when you can stick the middle with a toothpick and bend the toothpick sideways without breaking the toothpick. If the toothpick breaks, the brisket needs to cook more.
