Story

Quick, tasty, and peachy are all Christy’s favorite things.  This recipe does the trick for all three! Eat with ice cream for the perfect treat.


Ingredients

  • 5-6 medium peaches (peeled and sliced)

  • ¼ cup butter

  • ½ cup brown sugar

  • ½ tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp salt

  • Pinch fresh lemon zest

  • 1 tbsp lemon juice

  • 1 tbsp Jack Daniel’s Southern Peach Cocktail (substitute vanilla if needed)

Equipment Needed

  • 8 inch cast iron skillet

  • Grill or stove top


Instructions

  1. Grab 5-6 medium-sized peaches, peel, and cut into 1/2 inch slices. (About 6 cups)

  2. Put an 8 inch cast iron skillet on top of a hot grill. This is great to do after you've cooked all your other food because the fire does not have to be very hot. Medium heat is all that is needed.

  3. Melt 1/4 cup of butter in skillet.

  4. Add 1/2 cup of brown sugar and stir until it bubbles

  5. Put sliced peaches in a large bowl and cover with 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp salt. Add a small pinch of fresh lemon zest and 1 tbsp lemon juice. Stir until evenly mixed.

  6. Once butter/brown sugar mixture begins to bubble, pour in peaches.

  7. Stir occasionally to prevent sticking. You want the butter & brown sugar to begin to thicken. Close grill top if needed, it will add a nice hint of smoky flavor.

  8. After about 6 minutes pour in 1 tbsp Jack Daniel's Southern Peach. Cook for 1 additional minute. (Use vanilla extract as a substitute if desired)

  9. Remove from heat and let cool.  The mixture will thicken as it cools. Add it to your homemade ice cream or your favorite out of the freezer brand.
