BBQ Pork Loin in a Smoke Bath

Story

Had a little fun today training my daughter on trimming techniques and prepping pork loin.

We grabbed a 5lb premium pork loin. Trim off the silver gristle, the other muscles that were still attached, and cut off the white fat cap. The next steps are simple:

  • Smoker or Oven


Instructions

  1. Score the top of the loin into diamond shapes on top. Starting from the top, take a sharp knife and cut diagonal lines left to right about 3/4 of an inch apart. On the other side of the loin, start at the top and cut lines diagonally right to left. Cuts should be between 1/4- 3/4 inch deep.

  2. Rub olive oil over the entire loin, including down in the cuts.

  3. Mix together 2 parts Hurricane Rib Rub to 1 part Game On seasoning. Sprinkle on all sides of loin. Be sure to get in the cracks of the diamond cuts.

  4. Let set for 10-15 minutes to let seasoning “sweat in” the meat.

  5. Place directly on the middle rack of your smoker. Temperature should be 225 degrees.

  6. Cook to internal temperature of 138-140 degrees. Use a meat thermometer to check for doneness.

  7. Remove from smoker and place on tray. Sprinkle lightly with rub mixture (#3 above) and lightly brush on BBQ sauce.

 

Tips and Tricks

When you slice the loin, juice will squeeze out of meat. Enjoy!
