St Louis Style Ribs 2.jpg

Prep Time: 10 minutes

Cook Time: 3 hours

Makes 1 rack of ribs

Best with: G2 BBQ, Hurricane Rib Rub, Big D’s BBQ Sauce

Story

Some of my biggest wins early in my competition days were from ribs. Here’s a simple recipe to follow to win over your family and friends.

Ingredients

Equipment Needed

  • Smoker (or turn your grill into a smoker with a two zone fire)

  • Tin foil

Instructions

  1. Use a paper towel and pull membrane from back of ribs

  2. Square up ribs by cutting off smaller edge (optional)

  3. Sprinkle G2 BBQ Seasoning on the bone side of ribs

  4. Flip ribs and cover meat side with G2 BBQ Seasoning

  5. Let the seasoning “sweat in” for 10 minutes

  6. Sprinkle meat side with light coat of Hurricane Rib Rub

  7. Put ribs in smoker at 275 degrees for around 2 hours, or until the rub sets and you can not rub it off with your finger

  8. Lay tinfoil down, cover middle with Big D’s Q BBQ sauce and Hurricane Rib Rub

  9. Place ribs meat side down on tinfoil

  10. Drizzle BBQ sauce and Hurricane Rib Rub on Bone side

  11. Wrap with foil and place back on smoker meat side down

  12. Cook for approximately another hour (or until tender)

  13. Remove from cooker

  14. Brush a light coat of BBQ sauce on top side

  15. Place uncovered ribs back in cooker for 15 minutes to set the glaze

  16. Try not to eat an entire rack all by yourself, we dare you :)

Tips and Tricks

In the video I cut off the small end of the rack of ribs. This helps presentation and is used in competitions. If cooking at home, leave it on to feed more.  Or, cut it off and cook it beside the larger rack.  It will cook faster than the larger ribs.
