Sweet & Spicy Stuffed Pork Loin

Story
When you cook as much BBQ as Big D does, sometimes you’ve got to spice things up for your family. This dish is a family favorite for tailgating or cookouts!
Ingredients
Center-cut pork loin
2-3 sweet bell peppers
Green onions (chopped)
Mozzarella and provolone cheese
Butter Spray, or butter, or other vegetable oil
Ranch dressing
Sriracha
Big D’s Q BBQ sauce
G2 BBQ Rub
Game On Seasoning
Hurricane Rib Rub
Equipment Needed
Smoker (or use your grill with a two-zone fire if needed)
Use an oven if you don’t have one of the above
Toothpicks
Sharp Knife
Butcher Twine
Grill with grill grates (if you desire to sear)
Instructions
Grab a center-cut pork loin, sweet peppers, green onions, and pork sausage links.
Trim the outside of the loin to get rid of the hard fat that will not render when cooking. Score remaining fat in diamond pattern with a kitchen knife.
Slice a thin line on the outside of the loin. Continue to gradually cut into the line and roll the loin until it is one flat piece of meat.
Spray loin with Parkay Butter spray (you can use other cooking oils or butter if desired)
Layer sweet bell peppers. Sprinkle with G2 BBQ Rub & Game On Seasoning
Layer diced green onions. Layer sliced sausage. Sprinkle on more G2 BBQ Rub and Game On Seasoning
Layer with provolone and mozzarella cheese.
Begin from the narrow end and slowly roll into spiral. Keep all stuffing inside the swirl.
Tie in 4 places with butcher twine. Place toothpicks in the bottom of the spiral to hold the layers together.
Sprinkle the outside layer of meat with Game On Seasoning. Cook on smoker (or in oven if desired) at 240 degrees to an internal temperature of 135 degrees. Remove from the smoker, slice, and sear on grill grates (if desired).
Make the spicy BBQ Ranch Dressing with the following ingredients:
1/2 cup Ranch dressing
1/3 cup Big D's BBQ sauce
1 Tbsp Sriracha sauce
